Niman products are carefully vacuumed packaged in special oxygen barrier film. During packaging oxygen is pulled out of the package and sealed air tight to preserve the quality and extend the shelf life. It's oxygen that gives meat its reddish color; don't be alarmed if your meat looks brownish in color, this is normal. Meat is a natural muscle and as such, it all reacts differently to the packaging. At times some packages may look darker while others may look brigher in color. When the vacuum seal is broken and the meat is exposed to oxygen, oxidation will begin to occur and the meat will begin to very slowly "bloom" or return to its reddish color. At the same time an inert gas will be released sometimes expelling a sour smell. The smell will dissipate. Using oxygen barrier film gives our customers a higher integrity product with longer shelf-life and increased food safety.
In summary, the color variation and gas odor is normal due to the packaging technology we use to protect the meat and extend shelf life. All of our meat is subject to USDA quality control fabrication and packaging processes.
Niman Ranch products are flash frozen at the peak of freshness. The product is individually vacuum sealed to remain fresh in your freezer for up to 24 months. Your order will be packed with the appropriate cooling materials to ensure it arrives in optimal condition. Products may be thawed upon arrival, but are safe to use and can be refrozen if they are cool to the touch. Simply put in the refrigerator for immediate use or in the freezer to use at your convenience.
